Zucchini Muffins

A great way to use some of your garden zucchini in a tasty muffin!

Ingredients
 4 ½ cups grated zucchini
 ½ cup melted unsalted butter
 ½ cup unsweetened applesauce
 2 cups sugar
 3 eggs, beaten
 1 tbsp vanilla
 1 tbsp baking soda
 ¼ tsp salt
 4 ½ cups all-purpose flour
 1 tbsp cinnamon
 ¾ tsp nutmeg
 1 cup walnuts, raisins, or chocolate chips (optional)

Preheat the oven to 350 degrees Fahrenheit. In a large bowl, combine the sugar, eggs, and vanilla. Mix in the zucchini and the melted butter. Then, mix in all dry ingredients (flour, baking soda, nutmeg, and cinnamon) after combining in a small dish. For chocolate muffins, add 1/4 c. cocoa and reduce the flour by about 1/4 c. Add walnuts, raisins, or chocolate chips.

Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Use a spoon to distribute the muffin batter equally among the cups so they are full. Bake on the middle rack of your oven until the muffins are golden brown, and the top of the muffins bounce back when you press lightly on them. This will take around 25-30 minutes.

Test the muffins with a toothpick to make sure they are baked all the way through. Let cool for 5 minutes in the tin, before removing and let cool for another 20 minutes

Note: You don't need a mixer, just stir with a wooden spoon. If you add a lot of craisins or walnuts you could end up with more than 24 muffins.
